Q: Why did you become a Health Counselor?
In late 2005 after 35 years of yo-yo dieting, I was anxious, bingeing on chocolate just to get through each day, grossly overweight, and if I’m honest – obese. I would wake up each morning and wonder, have I abused myself beyond repair? Is this the day my body gives up on me? Why was I doing this to myself?

I was literally scared to death, and had to admit to myself that I was committing suicide with food.

I asked for help, was diagnosed with eating and anxiety disorders and realized I was a Highly Sensitive Person (HSP). I was adamant about not using drugs, trusting my body would know what was best for me. I found the tools that worked, the personal solution that was right for me.

As I got better I just knew I wasn’t the only one struggling with weight and body image, foods cravings, mood swings, anxiety, feeling overwhelmed, and missing out on things because of total exhaustion.

I made a commitment to dedicate myself to helping other women love themselves enough to be able to live the healthy life of their dreams.

Q: So how did you become certified?
I studied nutrition in school and then on my own for years interested in why what worked for one person might hurt another. I was always researching the latest health findings. It was important to me to find training that also believed that health and wellbeing meant something different to each individual. And that each person should be treated as a whole.

I received my training at and am certified as a Health Counselor by the Institute for Integrative Nutrition in partnership with Teachers College Columbia University in New York City, and certified as a Holistic Health Practitioner by the American Association of Drugless Practitioners.

My training included Eastern and Western nutrition, over 100 dietary theories, contemporary health studies, health counseling and guest teachers that have pioneered new ideas in personal growth and nutrition including Andrew Weil MD, Deepak Chopra MD, Neal Barnard MD, Mehmet Oz MD, Barry Sears PhD and others.

Q: How are you different from a nutritionist or dietician?
Unlike nutritionists and dieticians that use the FDA pyramid, I use many dietary theories to help my clients. I also include all aspects of their lives as they are working through their personalized program. This allows for life long changes to be more easily maintained because the client is treated as a whole person and deals with the many factors affecting their health.

For women to get the best results and benefits it is important to provide them with all the tools they need to accomplish their goals. I have found that for clients to make lasting changes, it takes time to build a strong foundation that will provide true support. It’s like sitting in a chair with only one leg – all four are needed and that requires more time to build.

This is truly a commitment to make yourself a priority and working to make changes. There will be challenges along the way, but I am here to support you. By being honest with yourself and me, we will figure out what is working for you and try new ideas when things aren’t. This is all part of the personalization of your program.

Each week I’d say “this is the week that will be different”. I know what I need to do. Take the time to plan my meals. Take the time to get the exercise I need. Take the time to rest and maybe just sit and read or just sit and to nothing! But the end of the week comes and I haven’t done any of it. Until I talked with Vicki. Vicki asked me if I cancel appointments with clients. Of course not! They’re important! Then she asked me if I was important. Of course I am! Then the big question…..! Was I willing to make appointments with myself to do the things I needed to do and commit to keeping them.  Yikes. Now I really had to be in alignment with my statement – I am important enough to make an appointment to take care of myself and keep it.  So I got out my calendar and together we found a few blocks of time for me. And you know what, it worked! A few weeks later, very busy weeks mind you, and I was questioning if I was still doing this. Well I just looked at my calendar and I did find the time to get in some exercise, some fresh air and a trip to the museum! Ok. So this is working! Thank you Vicki for making me realize that I’m important enough to go on my calendar!

Dear Vicki, Soon I will be having my last session and I realize I have mixed emotions.  I can see and am thrilled with the many things I have learned and the progress I have made. Your informative and wise counsel has reshaped my thinking on such a variety of subjects. Vicki, My wife, C, just read me her letter to you and I would like to take this opportunity to add my thoughts. Though my wife is a positive and loving person, I found that on the days C had her sessions with you, she was even more at peace and would feel energized with what she had learned and couldn’t wait to share it with me.   She felt enthusiastic about making positive changes in her life and I am happy to say, I too was the recipient to benefit from the knowledge gained.  Through our discussions, even my thinking has taken another direction a more, whole body, healthy approach, if you will; however, I must admit I am a bit slower with the up take. I have always been in C’s corner and wanted her to do what was necessary in order to make herself happy.  I was a little unsure how these sessions may benefit long term, however, I now know I was wrong to think negatively in any way.  Though at times in the past my wife felt “out of control”, she seems to have learned that the process of change isn’t a race and that it is just that – a process.  What a wonderful thing to come to terms with. From a husband’s perspective, I think from all the praise I heard from C about you and your sessions together, accompanied by the positive impact it has had on her and our lives together, I have to say I am extremely pleased. We do eat better. We are not only learning more about nutrition, we also care more about our nutrition and what we put into our bodies. We are nurturing ourselves with quiet times, trying to exercise more and take more walks and this has lead to stronger spirits as well.  We now are listening to our bodies more and even going to bed earlier instead of forcing ourselves to stay up because of a TV program or thinking we have to check to see if we received an email etc.  We may not be perfect, but we are heading in the right direction.  It is our thinking process that is continuing to grow and change and your contribution to this process has been invaluable. Nurturing our bodies and our mind has, and will continue to be, a continuous growth journey we will take together. The dictionary defines holistic as putting parts together to form something whole. When talking about holistic health it means taking into consideration all the parts that make up a person’s life, their “whole” self.

Everything, whether it is positive or negative, impacts your health. How you feel about yourself, the job you have, the foods you eat, the support you receive as well as other things all combine to create your state of health.

Let’s look at an example to illustrate how taking a holistic approach to health works.

Have you ever felt like this? You couldn’t get out of bed in the morning because you were exhausted? Even the coffee didn’t help. You skipped breakfast because you decided you needed to lose some weight? Kept wondering “What is wrong with me?”

Many different things have all come together to make you feel the way you do.

A holistic health approach would look at all the different areas of your life to find what’s out of balance. Then a plan would be developed to deal with your issues. The plan may include changes in your diet, physical activities, relaxation techniques and surrounding yourself with supportive people.

So when you are not feeling as well as you would like, don’t look for just one reason. Instead take a holistic approach to create your healthier, happier life.
